We were without internet yesterday, so I was unable to post a recipe. This is my mom's recipe for ham fried rice, and I think it comes from Japan (she lived there when she was little).
Yakamish
2 c cooked rice
1 1/2 T soy sauce
2 T butter or oil
1/2 c onion
1/2 c diced ham
1/2 c peas
1 egg
There are no instructions with the recipe, but this is what I do: saute onion in oil; add ham and peas and fry for a few minutes. Add rice, soy sauce, and egg. Stir until mixed and egg is cooked.
I usually double this!

Weekly Quote 7/26/10
"It's Lottie! I think she's possessed!" is indeed from 'A Little Princess'. Ada and I had a moment last week while watching this. I ALWAYS cry at the end when the police are trying to take Sara away and her dad can't remember her. As I was sobbing, I looked over and Ada was crying too! So I held her and we just sat and cried together. It was precious. The moment didn't last too long, however, as a while later she told me she never wanted to see me again. Hey, I'll take what I can get.

Cheese Fondue
Yesterday was Ada's birthday so I didn't get around to posting a recipe. I decided on this one because Tyler and I ate at The Melting Pot a few weeks ago. It was good, but now that we've experienced it, we think we'd be more than happy staying home and making this with a good chocolate fondue as well (and we'd save a load of money).
Cheese Fondue
2 c grated Monterey Jack cheese
1 c Swiss cheese
1 c mozzarella cheese
2 c chicken broth, separated
1 clove garlic, crushed
1/2 t Worcestershire sauce
3 T cornstarch
dash of nutmeg
salt and pepper to taste
Simmer garlic and 1 3/4 c broth. Slowly add cheese until all melted. In separate cold dish, mix 1/4 c broth, Worcestershire sauce, salt, pepper, nutmeg, and cornstarch. After all the cheese is melted, pour in the cold mixture until thick.
Dip bread, veggies, chicken, or whatever you want! We love this recipe.

Classic White Layer Cake
This is the cake I made for Kate's birthday. I baked it in an Ariel-shaped pan. Unfortunately, it overflowed in my oven. Then, when I was trying to remove it from the pan, I dropped it on the floor and it became a giant mess of crumbs. I ended up having to borrow a cake mix so I could have an Ariel cake for Kate in time for the party (and for Morgan to decorate it). Tyler and I salvaged what we could and it was delicious. I'll have to try it again in a more friendly-shaped pan.

Classic White Layer Cake
1 cup whole milk, at room temp.
6 large egg whites, at room temp.
2 t. almond extract (optional)
1 t. vanilla extract
2 1/4 c. cake flour (if you don't have, use 7/8 c. all purpose flour and 2 T. cornstarch for 1 cup cake flour)
1 3/4 c. sugar
4 t. baking powder
1 t. salt
12 T. unsalted butter, softened
Whisk milk, egg whites, and extracts together in a liquid measuring cup and set aside.
Whisk flour, sugar, b. powder, and salt together in a large bowl. Beat flour mixture and butter together with an electric mixer until the mixture resembles moist crumbs.
Beat in all but 1/2 cup of the milk mixture. Increase the speed to med. and beat until smooth, 1 to 4 minutes, scraping down the sides of the bowl as needed. Beat in the remaining 1/2 cup of milk mixture.
Pour into prepared pan and bake at 350, 25-30 min. for a 9x13, 20-25 min. for rounds.

Orange Spinach Salad--a day late
Sorry for the delay. This is a good summer recipe.
Orange Spinach Salad:
1 10 oz bag spinach
1 11 oz can mandarin oranges
2 or 3 green onions
1 large avocado, sliced
1/2-1 lb cherry tomatoes, halved
Dressing:
1/2 tsp grated orange rind
1/2 cup frozen o.j. concentrate
1/2 tsp salt
1/2 c vegetable oil
2 T sugar
2 T vinegar
1 T lemon juice
I go light on the dressing. It makes way too much.
