Orange Spinach Salad--a day late

Sorry for the delay. This is a good summer recipe.

Orange Spinach Salad:

1 10 oz bag spinach
1 11 oz can mandarin oranges
2 or 3 green onions
1 large avocado, sliced
1/2-1 lb cherry tomatoes, halved

Dressing:

1/2 tsp grated orange rind
1/2 cup frozen o.j. concentrate
1/2 tsp salt
1/2 c vegetable oil
2 T sugar
2 T vinegar
1 T lemon juice

I go light on the dressing. It makes way too much.
