Pumpkin Waffles with Apple Syrup

My friend Shanny posted this a while back and I've made them a few times. They are heavenly!

Pumpkin Waffles:

1/2 c canned pumpkin
2 c flour
1/4 c sugar
1 T baking powder
1 t cinnamon
1/2 t salt
2 eggs
1 1/2 c milk
4 T butter, melted

Stir flour, sugar, baking powder, cinnamon, and salt in bowl. In a separate bowl, whisk together eggs, milk, melted butter, and pumpkin. Pour the wet ingredients over flour mixture and stir until just combined. Cook in a waffle iron. Serve immediately with apple syrup.

Apple Syrup:

1 c sugar
1/4 t cinnamon
2 T lemon juice
2 T cornstarch
2 cups apple juice
1/4 c butter

Stir cornstarch, sugar, and cinnamon together in saucepan. Add apple juice and lemon juice and stir frequently. Boil one minute, then reduce heat to low and add butter. Stir until melted.

Oooooo, those look so good!! We tried the chicken enchilada recipe last night and LOVED it! Keep those recipes coming!
