Chicken Enchiladas
Disclaimer: this recipe does NOT contain cream of chicken soup.
My friend Vanessa told me about this recipe. Neither of us has it written down, so I'll do my best to portray it here.
2 frozen chicken breasts
1 packet taco seasoning
1 can diced tomatoes (with the juice)
1 can beans, rinsed and drained (I prefer black)
corn (I add a few handfuls of frozen corn, but you could also add a can)
1 can (soup can-sized) green enchilada sauce
10 medium-sized tortillas
Put chicken in bottom of slow cooker and cover with taco seasoning. Add tomatoes, beans, and corn and cook for 6-8 hours. When done, shred chicken and add 1/2 can of enchilada sauce. Roll into tortillas and place in greased 9x13 pan. Pour rest of enchilada sauce on top and cover with grated cheese. Bake at 350 for 20 mintues.
I think they're good on their own, but you can add sour cream, salsa, guac, or whatever.

Two months ago...
I took at trip to Kansas! I left the hub and kids behind and took a nice little vacation. Angie and Hyrum were planning on going and talked me into it. Then I talked Abby into going, and when Emily found out we were all going she invited my parents along for the ride! Too bad we couldn't get Dude to come.
Emily and Neal live in Overland Park (near Kansas City) and had just had their second child. I'd never been to visit in the 4+ years they've lived there, so I decided this was the time to go! Neal had a break from his residency stuff so he was around the entire time. We weren't there for too long and really didn't do a lot, but we had lots of fun. The girls ate out at a Thai restaurant while the guys went to a Royals game (I was really torn on which to do), we got frozen custard, went shopping, played games, watched a movie, played wiffle ball, and had a barbecue. On Sunday, little baby Austin (the first man-child grandkid for my parents) was blessed and we had lunch afterward. Ang & Hy and my parents left that day, but Abby and I stayed until Monday. We were able to go to Independence, MO and Liberty Jail before we flew back home.
The girls who shopped. There was an awesome shopping center and my sisters talked me into a very indulgent (for me) purchase from J. Crew. I justified it by having my mom save it for my b-day

Sisters again
The Community of Christ temple in Independence, MO. We didn't get to spend much time in Independence. The Community of Christ church was having their worldwide conference, so there were lots of people there. We went to the LDS Visitors' Center and then left (another sideways photo...all apologies)
Liberty Jail, where Joseph Smith and four others were unjustly imprisoned for 4 1/2 months under terrible conditions. It was a humbling experience to visit. My favorite scripture was revealed to Joseph while he was here
It was fun to get away and spend time with my family. I wish I could see my sisters more often! It was a great trip, but I was happy to get home and see Tyler & the girls. I think they missed me.

Mom's Brownies
This is my favorite brownie recipe. They are rich and fudge-like. I think they're best with semi-sweet chocolate chips.
1 1/2 c flour
1/2 t salt
2/3 c butter
1 1/2 c sugar
1/4 c water
2 bags (12 oz each) chocolate chips
2 t vanilla
4 eggs
Mix flour and salt in bowl and set aside. In saucepan, combine butter, sugar, and water. Bring just to a boil. As soon as mixture starts to boil, remove from heat. Add vanilla, eggs, and 1 bag of chocolate chips to saucepan. Stir until chocolate is melted. Combine chocolate mixture with flour mixture. Pour into greased 9x13 pan. Pour remaining chocolate chips on top. Bake at 325 for 30-35 minutes, until the sides start to pull away from the pan.

Soft breadsticks
This is a really fast, easy recipe if you want a little something extra to go with dinner. There is no yeast, so you can whip them up in no time! Tyler loves these.
2 1/2 c flour
4 t sugar
3 t baking powder
1 t salt
1 1/3 c milk
6 T melted butter
In a small bowl, combine first 4 ingredients. Gradually add milk and stir to form a soft dough. Turn onto a floured surface. Knead gently 3 to 4 times. Roll into a rectangle. Cut into 24 breadsticks. Place butter in 2 9x13 pans. Put breadsticks in butter and turn to coat. Sprinkle with desired toppings (I like garlic salt, Italian seasoning, and Parmesan cheese). Bake at 450 for 14-18 minutes.
I usually half this recipe.

Cheesy Potato Soup
This only makes two servings, so I usually quadruple it so we have plenty for leftovers. It is a no-fail recipe, whether you use skim milk or whole.
2 tablespoons onion
1 1/2 tablespoons butter
1/2 teaspoon salt
3 tablespoons flour
1 cup milk
1/4 cup chicken broth
1 cup pre-cooked potatoes
1/4 cup shredded cheese
Saute onion in butter until tender. Stir in flour and salt. Remove from heat. Gradually add in milk; cook and stir over medium heat until thick. Add remaining ingredients. Stir over low heat until warmed through.
I always cook carrots with the potatoes to make it a bit healthier. You can add corn or any other veggies you like. It's also good sprinkled with crumbled bacon.
